Ingredients

Soup base
  • 1.5 lb chicken breast
  • 1 onion
  • 4 garlic cloves
  • 4 cup chicken broth
  • 2 cup heavy cream
  • 1 cup whole milk
  • 4 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1.5 cup freshly grated parmesan
  • 0.5 cup cream cheese softened
  • 1 tsp garlic powder
  • 0.25 tsp nutmeg
  • 8 lasagna noodles broken into pieces
Cheese dollop and seasoning
  • 1 cup ricotta
  • 0.25 cup parmesan
  • 1 fresh parsley
  • salt to taste
  • white pepper to taste

Equipment

  • 1 Dutch oven

Method

Brown the chicken
  1. Season the diced chicken breast with salt and white pepper, then add to a large pot with 4 tbsp unsalted butter. Brown over medium heat for 4-5 minutes, stirring occasionally, until golden, then remove to a plate.
Sauté aromatics and build the roux
  1. In the same pot, sauté the diced onion for 3 minutes until softened. Stir in the minced garlic and cook for 1 minute, keeping it fragrant without browning.
  2. Whisk in the all-purpose flour and cook for 1 minute to remove the raw flour taste, stirring continuously.
Simmer the soup
  1. Gradually add the chicken broth, then pour in the heavy cream and whole milk while stirring to keep the mixture smooth. Add the garlic powder and nutmeg and stir well until evenly combined.
  2. Bring the mixture to a simmer, then add the broken lasagna noodles. Cook for 10-12 minutes, stirring occasionally, until the noodles are tender.
  3. Return the browned chicken to the pot and simmer briefly, just until warmed through, about 1-2 minutes.
Finish and serve
  1. Remove the pot from the heat and stir in the freshly grated parmesan and softened cream cheese until smooth and creamy.
  2. Taste and adjust with more salt and white pepper, then serve hot with a ricotta dollop and a sprinkle of fresh parsley.

Notes

Pro tip: to prevent lumps, add the broth/cream/milk gradually while whisking so the roux stays smooth. Store leftovers in the fridge up to 3 days; reheat gently on the stove with a splash of milk to loosen. Freezing isn’t recommended because the dairy-based texture can separate. Dietary swap: use half-and-half and a reduced-fat cream cheese for a lighter version while keeping the parmesan for flavor.
