Bacon
  • 8 strips bacon Cook until crisp, then crumble; reserve some for topping.
Vegetables (aromatics)
  • 3 carrots Slice for even cooking.
  • 3 celery Slice for even cooking.
  • 1 onion Dice for sautéing.
  • 3 garlic Minced.
Broth and seasoning
  • 6 cup chicken broth
  • 1 packet (1 oz) ranch seasoning mix
Creamy base
  • 1 cup heavy cream
  • 8 oz cream cheese Softened so it melts smoothly.
Cheddar and noodles
  • 2 cup shredded sharp cheddar
  • 8 oz egg noodles
Garnish
  • green onions For garnish, to finish bowls.
Seasoning
  • salt and pepper To taste.

Equipment

  • 1 Dutch oven

Method

Sauté the vegetables
  1. Heat a Dutch oven and sauté the onion, carrots, and celery in bacon drippings or butter for 5 minutes, until starting to soften and smell fragrant. Stir in the garlic and cook for 1 minute.
Build the soup
  1. Pour in the chicken broth and add the ranch seasoning mix, then bring the mixture to a boil with steady bubbling.
Cook the noodles
  1. Add the egg noodles and cook for 5 minutes, stirring occasionally so they cook through evenly.
Add chicken and melt the cream cheese
  1. Stir in the shredded chicken and most of the bacon, then reduce the heat to keep the soup at a gentle simmer.
  2. Continue stirring and add the softened cream cheese, mixing until melted and the soup looks smooth and creamy.
Finish with cheddar
  1. Add the heavy cream and stir, then add the cheddar and stir until fully melted and smooth.
Season and serve
  1. Season with salt and pepper to taste, then serve with the remaining bacon and green onions on top.

Notes

For the creamiest texture, soften the cream cheese before cooking and keep the heat at a gentle simmer once it goes in to prevent a grainy sauce. Store leftovers in an airtight container in the refrigerator up to 3-4 days; reheat gently on the stove. Freeze is not recommended because egg noodles can soften too much, but you can make the base (without noodles) and freeze it for up to 2 months, then cook fresh noodles when reheating. For a lower-fat option, use reduced-fat cream cheese and half-and-half instead of heavy cream (texture will be slightly less rich).
