  • 2 tbsp fresh ginger Grated.
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 0.5 tsp dried oregano
Broth and seasonings
  • 8 cup chicken broth
  • 1 tsp salt To taste.
  • 1 tsp black pepper To taste.

  • 1 tbsp lemon juice For flavor; plus extra for serving.
  • 1 tbsp honey
  • 0.5 fresh parsley For serving.
Noodles

Equipment

  • 1 Dutch oven

Method

Build the broth
  1. Add chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, dried thyme, and dried oregano to a large pot (Dutch oven). Bring to a boil over high heat, then reduce to a gentle simmer.
  2. Simmer for 25-30 minutes until the chicken is very tender and the vegetables have softened, stirring once or twice so the spices stay suspended.
Shred and finish
  1. Remove the chicken to a plate, shred the meat, and discard bones and skin, then return the shredded chicken to the pot so it warms through.
  2. Add egg noodles and cook for 6-8 minutes until tender, keeping the broth at a steady simmer.
  3. Stir in lemon juice and honey, then season with salt and pepper to taste so the broth is balanced and bright.
  4. Serve hot with extra lemon and fresh parsley, keeping the golden broth visible around the noodles.

Notes

Pro tip: use bone-in chicken thighs so the broth tastes richer without extra fat—skim any foam if it appears during the boil. Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently, adding a splash of broth or water if the noodles thicken. Freezing is not recommended because egg noodles can soften; for a freezer option, cook noodles separately and add after reheating. For a lighter swap, use reduced-sodium chicken broth and reduce the honey to 1/2 tbsp while still adding the lemon at the end.
