Method
Campfire setup
- Build a campfire or light a fire pit and let it burn down to hot coals. You want steady heat that warms the marshmallow through without heavy flames.
Assemble and toast
- Place a piece of chocolate on half of a graham cracker. Set the remaining graham halves aside for topping.
- Skewer a marshmallow on a roasting stick and hold it over the coals, rotating slowly, until golden and toasted, about 2–3 minutes. Keep it moving so it browns evenly.
- Carefully slide the toasted marshmallow onto the chocolate. Aim for the center so the chocolate can melt and bind.
- Top with the second graham cracker half, pressing gently until the chocolate melts. Press just enough to seal without crushing the crackers.
Repeat and serve
- Repeat with the remaining graham cracker halves, chocolate, and marshmallows. Serve immediately while warm and gooey.
Notes
For best results, toast the marshmallow until golden with light browning—pastry-dark or charred spots will taste bitter. Store assembled s'mores at room temperature only briefly (about 1 day); they soften quickly, and freezing is not recommended. If you need a dairy-free version, use dairy-free milk chocolate bars and proceed the same way.
