Chicken broth
  • 8 cup chicken broth
Turmeric

Dried thyme
  • 1 tsp dried thyme
Black pepper
  • 0.25 tsp black pepper
Cayenne
  • 0.25 tsp cayenne
Lemon juice
  • 1 tbsp lemon juice
Apple cider vinegar
  • 1 tbsp apple cider vinegar
Honey
  • 1 tbsp honey
Egg noodles
  • 8 oz egg noodles
Fresh parsley
  • 0.5 cup fresh parsley
Lemon wedges
  • 1 lemon wedges
Salt
  • 1 salt to taste

Equipment

  • 1 Dutch oven

Method

Simmer the soup base
  1. Add the chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, dried thyme, black pepper, and cayenne to a large pot. Bring to a boil over high heat, then reduce to a steady simmer.
  2. Simmer for 30 minutes, covered if needed to maintain a gentle bubbling, until the chicken is very tender. Visual cue: the broth will look golden and fragrant and the chicken should pull apart easily.
Shred chicken and cook noodles
  1. Remove the chicken from the pot and shred the meat, discarding bones and skin. Return the shredded chicken to the pot so it stays hot in the broth.
  2. Add the egg noodles to the pot and cook for 6-8 minutes until tender. Visual cue: noodles soften and float slightly as they finish cooking.
Wilt greens and finish
  1. Stir in the kale and cook for 3 minutes until wilted. Visual cue: the greens turn bright and darker green as they soften.
  2. Stir in the lemon juice, apple cider vinegar, and honey, then season with salt to taste. Visual cue: the flavor brightens and the broth tastes balanced after the honey melts in.
Serve
  1. Ladle the soup into bowls and serve with extra lemon wedges and fresh parsley. Visual cue: lemon and parsley on top add a fresh, colorful finish.

Notes

Pro tip: shred the chicken while it’s hot so it comes apart quickly and mixes back in evenly. Store leftovers in the fridge for up to 3 days; cool uncovered first, then cover. Freezing is not recommended because egg noodles can soften too much after thawing. For a dietary swap, use gluten-free egg noodles in the same 6–8 minute cooking window.
