Method
Cook the pasta and sausage
- Bring a pot of salted water to a boil and cook rigatoni until al dente; reserve 1/2 cup pasta water before draining. Visual cue: rigatoni should still have a firm center when you bite it.
- In a large skillet over medium-high heat, brown the sliced smoked sausage until caramelized on both sides; then remove to a plate. Visual cue: edges should look dark-golden and slightly sticky.
Build the sauce base
- In the same skillet, sauté the diced onion and red bell pepper for 4 minutes. Visual cue: they should soften and start to turn glossy.
- Add the minced garlic and smoked paprika and cook for 1 minute. Visual cue: the garlic should be fragrant without browning too much.
Simmer and combine
- Whisk BBQ sauce, honey, chicken broth, and Dijon mustard, then pour into the skillet and simmer for 5 minutes. Visual cue: sauce thickens slightly and looks smooth and glossy.
- Toss the cooked rigatoni with the reserved pasta water, then return it to the skillet along with the sausage. Visual cue: pasta should be evenly coated and the sauce should cling to the ridges.
- Stir in the shredded cheddar and season with salt and pepper. Visual cue: cheese should melt into a creamy, cohesive coating.
Finish
- Garnish with green onions and parsley and serve warm. Visual cue: bright green and herb flecks sit on top of the glossy sauce.
Notes
Pro tip: reserve the pasta water and add it when tossing—this helps the honey BBQ sauce cling to the rigatoni. Store in the fridge up to 3 days; reheat gently with a splash of broth or water to loosen the sauce. Freezing isn’t recommended because cheddar-based sauce can lose texture after thawing. For a lighter swap, use low-fat shredded cheddar and reduce BBQ sauce by 2 tablespoons while keeping honey the same.
