  • 4 carrots Sliced.
  • 3 celery Sliced.
  • 1 onion Diced.
  • 6 clove garlic Minced.
  • 2 tbsp fresh ginger Grated.
  • 2 cup shiitake or cremini mushrooms Sliced.
  • 2 cup kale or spinach Chopped; kale or spinach both work.
  • 8 cup chicken broth Use low-sodium if you prefer.
Seasonings and finishing
  • 1 tsp turmeric Helps flavor and color the broth.
  • 1 tsp dried thyme Adds savory herb notes.
  • 0.25 tsp black pepper Use for turmeric activation.
  • 1 tbsp lemon juice Stir in at the end for brightness.
  • 0.25 tsp salt Season to taste; add near the end.
Noodles and serving
  • 8 oz egg noodles Cook until tender in the simmering broth.
  • fresh parsley For serving.
  • lemon wedges For serving.

Equipment

  • 1 Dutch oven

Method

Simmer the base
  1. Add chicken, chicken broth, carrots, celery, onion, garlic, ginger, turmeric, dried thyme, and black pepper to a Dutch oven and bring to a simmer. Simmer for 20 minutes, stirring once, until the chicken is cooked through.
Shred and return chicken
  1. Remove the chicken from the pot and shred it, then return the shredded chicken to the Dutch oven. Stir to distribute evenly in the broth.
Cook the mushrooms
  1. Add the sliced mushrooms and cook for 5 minutes, stirring occasionally. Cook until the mushrooms are tender and the broth tastes deeply savory.
Cook the noodles
  1. Add the egg noodles to the pot and simmer for 6-8 minutes until tender. Watch closely so they cook through without getting mushy.
Wilt the kale and brighten
  1. Stir in the chopped kale (or spinach) and lemon juice, then cook for 3 minutes until the kale is wilted. The broth should turn vibrant and the greens should be just tender.
Season and serve
  1. Season with salt to taste, then ladle into bowls and garnish with fresh parsley and lemon wedges. Serve hot and finish with extra lemon at the table for brightness.

Notes

For best flavor, slice your vegetables evenly so they cook at the same rate during the first simmer. Store leftovers in the fridge up to 3 days; reheat gently, adding a splash of broth or water if the noodles thicken. Freezing is not ideal because egg noodles can soften after thawing. If you want a lighter version, use boneless skinless chicken breast and swap half the egg noodles for extra greens (kale/spinach) to reduce carbs.
